Football Food For Eagles Fans - Playoffs
There's nothing quite like getting to watch your team in the playoffs. Along with this bonus football comes the bonus get-togethers. We had quite the spread at my parents yesterday with all sorts of hoagies from Chicken Parm, Italian, to Turkey. My brother brought wings. There was chips and dip, 2 different salsas, a cheese spread and 3 different kinds of pepperoni, a brownie sundae setup, etc. Safe to say, I'm fat(ter) today.
Anyway, Mark had a similar idea and wanted to push his cholesterol level to new heights.

Say hello to sausage.
Picked up some homemade Italian sausage from my local market. De-cased it (un-cased it?) and browned the pork. Tossed in some yellow pepper, chopped jalepeno, as well as green onion.
Once that got all happy, in went some sour cream, some cream cheese and some yellow cheddar.
While it was melting, I sliced a nice loaf of Italian bread down the middle and hollowed it out a little. When the sausge mixture was ready, I spooned it onto the bread, and the wrapped it in aluminum foil.
Baked it for an hour while my red potatoes roasted up.
After the hour was up, I sliced the sandwich and drizzled some cilantro-capers aioli over the potatoes.
In the glass, Sam Adams Winter Brew. Because, yes, it is winter now.
And after the meal, some port wine, direct from Portugal. Thanks, Brother-In-Law Eric!

Wouldn't it be fun to see what Mark would cook up for the Super Bowl? Only two wins away.

I make a quick and easy sausage and peppers whenever the Eagles have a playoff game. I wouldn't call it superstition or what, but it makes for some good eating. I like your recipe and might give that a shot, minus the cheese. Gotta use cubanelle peppers and a large onion sliced, but I like the idea of baking a loaf of Italian bread and hollowing it. Thanks for the idea.
